dear helena, if you can find another green leave like parsley or other it would do, i guess. probably the dish is delicious without fresh coriander too!
fresh coriander IS a great flavour but not 100% necessary if you don’t NEED this flavour desperatly!
eggplant recepies should not be too hard to find. i have a few good ones, for example the following ones:
Aubergines warm, as salad
sauce: 2 Spoons of Lemonjuice
4 Spoons of (Olive)oil
1 Tsp. Salt little Pepper
400gr Aubergines in ca. 2cm dices
2 pieces of Garlic (how do you calle the parts of garlic in english?)
fry the aubergines and gralic until soft in little Oliveoil
300 gr Tomatoes, in dices too, add and heat gently together with Auberg.
if available 100 gr Feta or similar cheese cut in dices
100 gr Olives, if available, optional mix all with the sauce and serve on some lettuce leaves (if available)
Aubergines Regine
cut 2 Aubergines in rounds (Rondellen) of ca. 1cm)
beat 1 egg in a soupeplate
put some breadcrumbs + sesameseed + little salt in a soupeplate
turn the aubergines slices first in the egg, then in breadcrumbs, then fry in little oil in a fryingpan.
make a tomato”coulis”, means sauce with onion, garlic, herbes (of provence) oder italy and serve with the fryed aubergines.
if you can, tell me a litle about the market fruit and vegetables available or tell me with what fruit or vegetables od leaves you would like to cook.
